It is necessary to boil, but not the berries themselves, but the syrup with which they are poured. Thanks to this fragrant preparation, which has preserved many vitamins, you can easily make strawberry cake for the New Year.

IMPORTANT. Similarly, you can cook jam from currants, apricots and other fruits and berries.

Take:

  • 1 kg of strawberries;
  • 1 kg of sugar;
  • 2 grams of citric acid;
  • 200 g of water.

Prepare the syrup. Pour sugar into the pan and add water.

While the sugar is dissolved, take a strawberry. Remove the stalk with a knife. Larger berries cut in half, small berries do not need to cut. Prepared berries put in a bowl of heat resistant material.

Bring the syrup to a boil, add citric acid and boil for 13-15 minutes. Stir it so that the sugar doesn't stick. The finished syrup will be similar in color to honey.

Place a bowl of strawberries on a hot plate or place it in a larger plastic container. Fill the berries with boiling syrup. It will gurgle right in the bowl for some time.

Let the berries stand for 15-20 minutes. Under the influence of hot berries, they start up juice, and the syrup will turn bright red.

During this time, prepare cans and lids. Pour about 50 mg of water into half-liter jars and send to the microwave, turned on at high power, for about 10 minutes.

Boil the lids in the pan for 2-3 minutes, then place them on a clean, dry towel and let dry, not wiping.

Drain syrup through a colander in the same pan, where it is cooked. At the same time try not to touch the berries with your hands and a spoon.

Thick, which was formed on the walls of the bowl, scrape with a spoon and put in a saucepan. Boil for 10 minutes. You do not need to wash the bowl.

Again fill the berries with boiling syrup, as for the first time. Let stand for 20 minutes.

Remove sterilized jars from the microwave and place them upside down on a clean, dry towel.

And again pour the syrup into the pan. Now it needs to be boiled just 5 minutes.

In the meantime, place the strawberries in a jar, filling each one no more than half. The ratio of berries and syrup in the bank may vary.

Remove the foam from the finished syrup. Pour it over the cans to the brim and screw them on.
